Rice mostly is left over since women always like to err in the side of caution when preparing food. Excess food is acceptable. Running out of a dish in the middle of a meal is not. So next time you have extra rice we give many recipes of seasonings you can add to your left over rice and spice it up.
A favourite dish in south India Ė just add yogurt to your plain rice. Add a dash of slat if you prefer and have it with any pickle at home. Lailafoods mixed pickle and lime pickle would be great combinations.
Spiced up rice:
In a wok, take 2 tbs of oil. Let some mustard seeds crackle, add asafoetida if you have some, add some green chillies, chopped onion and tomato, a few curry leaves, salt and chilli powder or paste along with garam masala or curry powder or paste. Toss this mixture for a couple of minutes and add your left over rice with another spoon of oil. Toss in the wok for a minute and serve.
Mango or Gherkins rice:
If it is summer and you have access to mango, grate a raw mango. The recipe is almost similar to the spiced up rice. In a wok, take 2 tbs of oil. Let some mustard seeds crackle, add asafoetida if you have some, add some green chillies, chopped onion, a few curry leaves, salt and coarsely ground roast almonds. Add the grated mango and in case you donít have mangoes, you could add chopped Gherkins. Toss for a minute and add the left over rice and toss some more until all the ingredients are thoroughly mixed. Your mango or gherkins rice is ready with a tangy flavour.
Sausage fried rice:
Chop a couple of sausages into tiny bits. In a wok, take 2 tbs of oil. Add ginger garlic paste, I tbs of chilli sauce and soya sauce. If you have spring onion, you can add finely chopped spring onions too. Add the chopped sausages, and toss in the wok for a couple of minutes. Add the leftover rice and you have sausage fried rice. You can also add julienned carrots and capsicum to make it more wholesome.
