  • Half mug of Laila Pudding Rice
  • 2 pints of milk
  • 2/3 Cardamom pods
  • 2 tbsp sugar
  • 2 tsp rose water
  • Handful of almonds
  • Sultanas to decorate if desired


  • Begin by chopping the almonds. This can be a mixture of finely crushed almonds and larger pieces. Set these aside for later use.
  • Put the Laila Rice in water and leave to soak for an hour. When this is done, drain the rice.
  • When the rice is dry, grind it in a grinder until it becomes a powder.
  • Set the powdered rice aside and start boiling the milk.
  • When the milk is boiled, add the powdered rice. The powder will thicken the milk and the phirni will begin to form.
  • When it has boiled, turn the heat slightly low and leave to simmer. Now add the cardamom and rose water.
  • When the phirni is half cooked, add the sugar and stir. Keep simmering until approximately half the milk has boiled away.
  • Place in a bowl and then garnish with the chopped almonds and sultanas.
