The “Festival of Lights” is here – every one’s favorite time of the year! It is a fantastic time to celebrate the mood and food of India too! This recipe is a full course meal in itself, and what’s more, it’s non-fattening, so it’s very healthy too! It is different and unique, and very easy to prepare too. It uses all the typical spices that Indians love so much, with some flavourful, tender Jasmine rice(be sure to use Laila’s !) along with some creamy coconut milk. So do try it out and see how your family enjoys it! And of course, keep us in the know! We’d love to hear from you on how you enjoyed it!
