The “Festival of Lights” is here – every one’s favorite time of the year! It is a fantastic time to celebrate the mood and food of India too! This recipe is a full course meal in itself, and what’s more, it’s non-fattening, so it’s very healthy too! It is different and unique, and very easy to prepare too. It uses all the typical spices that Indians love so much, with some flavourful, tender Jasmine rice(be sure to use Laila’s !) along with some creamy coconut milk.   • 1 tablespoon vegetable oil
  • 1 /2 teaspoon cloves
  • ½ teaspoon cinnamon
  • 2 bay leaves
  • 250 grams Laila’s Jasmine rice
  • 720 grams chicken stock
  • 1 can Cocofresh’s Coconut milk
  • 4 tablespoons chopped coriander leaves
  • 50 grams roughly chopped cashews
  • 150 grams frozen peas
  • 1 teaspoon salt
  • FOR GARNISH: 40 grams shredded coconut


  • Add the shredded coconut to a large stock pot, over medium-high heat, and lightly toast. Remove to a small bowl and set aside.
  • In the same pot, add the oil and the rice and saute until the rice starts to brown, about 6 to 8 minutes. Add the chicken stock and the coconut milk. Stir and mix well.
  • Reduce the heat to a low simmer, cover and cook for 15 minutes. Remove from the heat and stir in the coriander, cashews and peas.
  • Season with salt and transfer to a serving bowl. Garnish with the toasted coconut and serve.
