  • 150 grams uncooked Laila Brown rice
  • 1 tablespoon olive oil
  • 400 grams undrained tin of black-eyed beans
  • 500 grams whole tomatoes
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • Salt, pepper to taste


  • In a large pan, heat oil on medium heat. Add onion, fry and cook until light brown. Add the beans, tomatoes, oregano and garlic. Bring to a boil, add in the rice. Cover, lower the heat, and simmer on low heat for 5 minutes.
  • Remove from the heat.
  • Serve with yoghurt and pickle.
