Channa Pilau is a flavourful and simple dish. As chickpeas are rich in protein and fibre, this dish is very healthy and makes a wholesome meal.

Ingredients

  • 450 gm Laila Basmati Rice
  • 1 small onion, finely sliced lengthwise
  • 500 gm tinned chickpeas
  • 4-5 tbsp oil
  • 25 gm butter
  • 2-3 tsp salt
  • 1-2 green chillis, to taste
  • 4-6 whole black cloves
  • 1 tsp coriander seeds
  • 1-2 tsp cumin seeds
  • tsp back peppercorns
  • 1-2 whole black cardamoms
  • 3-5 green cardamoms
  • 1-2 cinnamon sticks
  • Water (double the volume of the rice)

Method

  • Wash the rice gently and then soak in cold water.
  • Place a pan on the stove, when it is hot, place the oil, butter and sliced onions in the pan and fry on high heat until the onions are dark brown. Now add the spices and stir for one minute.
  • Add 1-2 tablespoons of water and stir quickly. Now add the chickpeas and stir once more. Pour the remaining water into the pan and bring to the boil.
  • You can now add salt to taste, it is advisable to add slightly more as the rice will absorb the salt when cooked.
  • Add the rice gently and stir. Bring to the boil and then turn the heat down to the lowest setting. Place a tea-towel over the pan and then put the lid on top. Allow the rice to cook like this for 15-20 minutes, stirring once.
  • Serve with curry or cucumber and mint yoghurt.
