  • 2 tablespoons vegetable oil
  • 225 grams skinned, boneless chicken breast fillets
  • red bell pepper chopped
  • 3-4 onions, diced finely
  • 4 cloves garlic, finely chopped
  • 585 grams cooked Laila Brown Basmati rice
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 150 grams frozen peas, thawed


  • Heat 1 tablespoon of vegetable oil in a large wok or frying pan, over medium heat. Saute the garlic. Add the chicken, chopped pepper and onions.
  • Cook and stir until the chicken is cooked through, for about 5 minutes. Remove the chicken onto a plate and keep warm.
  • Heat the remaining oil I the same frying pan, over medium heat. Add the rice, cook and stir to heat through.
  • Stir in the soy sauce, vinegar and peas, continuing to cook for 1 minute. Return the chicken mixture to the pan, while stirring all the time. Add the rice and heat thoroughly before serving.
