Though saffron is a bit expensive it lends a richly fantastic flavor to the rice. Use Laila Basmati rice for best results and make tasty saffron rice.

  • 400 grams uncooked Laila Basmati rice
  • 2 tablespoons butter
  • 2 or 3 bay leaves
  • Pinch of saffron threads
  • 500 ml vegetable stock
  • 375 ml boiling water
  • Salt to taste
  • teaspoon of saffron
  • Celery leaves for garnishing


  • Wash rice well, cover with cold water and keep it soaked for around 30 minutes.
  • Drain the water.
  • Melt butter in a frying pan over medium heat, add bay leaves. Add the drained rice. Cook well, stirring all the time, until all the moisture has evaporated.
  • Meanwhile, soak the saffron in 2 tablespoons hot water for a few minutes. Once it is soaked well, add the saffron to the rice along with vegetable stock, and salt. Bring to the boil, bring down the heat and cook on a simmering flame. Keep the rice covered, until all the water is absorbed, and the rice is cooked ( about 12-15 minutes).
  • Garnish with celery leaves and serve hot.
