Indian Coconut Rice makes a deliciously easy side dish that can be served with a variety of Thai and Indian dishes such as curries, stir-fried vegetables, plus fish and chicken mains. Our rice dish here is sure to be relished by all those who like the rich, creamy flavour and texture of coconuts.

  • 1 cup Laila Basmati Rice
  • ¾ cup grated coconut
  • 1 tsp mustard seeds
  • 2 tspurad dal
  • 2 red chillies
  • 2 green chillies
  • A few curry leaves
  • 1 tsp finely chopped ginger
  • 1 tbsp oil/coconut oil
  • A pinch asafoetida/hing
  • 8-10 cashew nuts


  • First begin by cooking the rice. Now spread it in a plate and keep it aside. Cook it in such a way that the grains are separate.
  • Heat the oil in a separate pan and add the mustard seeds. When they splutter, add the channa dal, urad dal and cashew nuts. Roast this until it becomes slightly brown. Be sure to add the channa dal first as these take the longest to get roasted. After this add the urad dal and cashew nuts.
  • Add the red chillies, green chillies, ginger, asafoetida and curry leaves.
  • Sauté this for a few seconds.
  • Add the grated coconut and sauté for a further few minutes until it becomes slightly brown. Add the salt as needed. Now you can add the rice and mix this well. Serve.
