Lebanese Fattoush Salad

Vibrant, crunchy, flavoursome and healthy Lebanese Fattoush Salad is a winsome accompaniment to the main course. This traditional dish is made with fried pita bread seasoned with spices & herbs, loaded with vegetables and tossed in a sweet-tangy dressing. What more, you can add grilled chicken or any fish to make it a complete meal.


  1. In a flat-bottomed pan, heat olive oil on a medium flame. Add pita bread and sprinkle some salt and pepper.
  2. Sauté pita bread for 10-12 minutes until crispy and golden and set it aside.
  3. In a large bowl, combine olive oil, lemon juice, garlic, lemon zest, balsamic glaze, salt and black pepper and stir well until the dressing is emulsified.
  4. Add in lettuce, tomatoes, cucumbers, green bell peppers, radishes, scallions and parsley; toss to combine.
  5. Put in fried pita bread just before serving and gently toss the salad again.
  6. Choose to serve it chilled or at room temperature.


For Salad

  • 2 large pita bread (cut into small pcs)
  • 5 tbsp olive oil
  • Kosher salt (to taste)
  • 2 tsp black pepper (freshly ground)
  • 2 large head of lettuce (chopped)
  • 2 large tomato (diced)
  • 4 cucumbers (diced)
  • 1 small green bell pepper (chopped)
  • 8 radishes (diced)
  • 4 scallions (chopped)
  • ½ cup fresh parsley (chopped)

For Dressing

  • 5 tbsp olive oil
  • 4 tbsp lemon juice
  • 4 garlic cloves (minced)
  • 2 tsp lemon zest
  • 2 tsp balsamic glaze
  • 1 tsp mint (freshly chopped)
  • 1 tsp salt
  • 1 tsp black pepper (freshly ground)
