Singaporean Rice

An easy & flavourful Singaporean recipe with Laila Foods Extra long Basmati Rice. A little twist has been given by adding Chicken Tikka masala and freshly prepared Mayonnaise.

Method

  1. To prepare the rice: You will need 2 cups of Laila Foods extra long basmati rice. Bring a pot of water to boil, add salt and oil into it. Add rice that has been pre-soaked for 20mins. Boil until rice is almost done, drain the water and put the rice back into the pot. Add butter & cover the lid, put to steam (on dum) for 15 minutes and set aside.
  2. To prepare the spaghetti: You will need spaghetti pasta. Boil as per package instructions, adding some salt and oil into the boiling water. Drain and then drizzle oil on the pasta to prevent it from clumping together. Put in a hotpot and set aside.
  3. To prepare the chicken gravy: Heat the oil in a pan. Add chicken, ginger and garlic paste and onions. Fry for a few minutes until the chicken’s color changes. Then add the capsicum, carrots and cabbage. Stir fry until the chicken is about done. Add the green chillies, chopped coriander, soya sauce, ketchup and lemon juice, plus chilli flakes, salt and hicken tikka masala. Cook together for 2 minutes, then add the corn flour mixed in water. Lower the heat and let the gravy simmer for a few more minutes. Adjust taste and turn off the heat.
  4. For the layering: Take a dish, add Laila Extra long Basmati rice rice to cover the bottom. Then follow it with the spaghetti to cover the rice and then drizzle mayonnaise sauce on it. Then pour the chicken gravy over the spaghetti. Drizzle the mayonnaise sauce all around the edges and some in the center. Finally garnish with fresh coriander & green chillies.
  5. Serve hot with the salad of your choice.

Ingredients

  • 2 cups Laila Extra long Basmati Rice
  • 200g spaghetti
  • 500g boneless chicken (cubed)
  • 1 cup Mayonnaise
  • 1/4 tsp garlic (minced)
  • 2 red & yellow bell peppers (cubed)
  • 1 carrot (cubed)
  • 1 small onion (chopped)
  • 1/2 cup cabbage (shredded)
  • 2 tbsp National chicken tikka masala
  • 1 tbsp Laila ginger/garlic paste
  • 1-2 green chillies (chopped)
  • 1 tbsp lime juice
  • 1 tbsp soya sauce
  • 1 tsp cumin powder
  • 2 tbsp coriander (chopped)
  • 1 tsp red chilli flakes
  • 1 tbsp ketchup
  • 1 tbsp corn flour mixed in 3 tbsp water
  • 4 tbsp oil
  • salt to taste
